Fall 2026 Barrel Program

We are a traditional cooperage based in Saskatchewan, working directly with winemakers to build barrels with a clear role in how they shape and support the wine.

Over the past four years, we’ve been developing our process alongside a local winery and distillery, with the aim of establishing a Canadian cooperage—keeping material, production, and craftsmanship rooted here, while fostering a more direct relationship between cooper and producer.

Canadian White Oak

Quercus alba

Our Canadian oak is 3-year seasoned and sourced from the Great Lakes region of Ontario. Growing at these cold northern latitudes, the slower development creates a tighter, more balanced grain structure. more controlled extraction, offering a slower release of tannins and aromatic compounds during aging.

It sits naturally between American and French oak—bringing structure and presence, with a more restrained and integrated expression that supports the wine without dominating it.

European Oak

Quercus petraea

We offer premium European oak, 4+ years naturally seasoned. Slow-grown with a fine, dense grain, it contributes subtle tannin, lift, and complexity over time, in line with traditional French oak profiles.

We source from Hungary’s Zemplén region, known for volcanic soils, varied terrain, and a long history of cooperage. This terroir supports slower tree growth and consistent grain structure.

The result is oak valued for subtle spice, structure, and integration during aging—complementing our Canadian oak and giving producers competitive options.

Barrel Reconditioning

Many distillers rely on skilled coopers to recondition their barrels—and for good reason. Over time, the interior char layer becomes saturated and less effective at contributing flavor. By carefully scraping back that layer to expose fresh wood, then retoasting, we rejuvenate your old barrels!
